Yummy Taco Salad

I'm on the board at the kids preschool, helping to organize the yearly events, etc. At the end of the year, the board members hold a luncheon to thank the teachers for putting up with our kids all year! We collect donations from area businesses for some little gifts and we all make different salads for everyone to enjoy.

Last year, the theme of the luncheon was "Oprah's Favorite Things". We made up a little riddle and the teachers had to guess what the prize would be for that riddle. Once they got it right, we all ran out and shouted "YOU get a pedicure, and YOU get a pedicure, and YOU get a pedicure, etc., etc." It was so much fun for us all AND the teachers got some really great things!!

This year, the theme was "Back to School" and we pretended like we were the teachers and they were our kids. It seems kind of silly, but they ALL played the part so well!! They had place mats at their tables with their names on them, with artwork done by the kids in the classes (the artwork was supposed to look like the teachers). They had little "cubbies" in their chairs as well (monogrammed bags to hold all of their goodies). We had them have different jobs like they do at school (line leader, door holder, snack helper, etc.) Each different thing we had them do, had a prize to go along with it (storytime had a leather bookmark and gift card to Borders, exercise had monogrammed water bottles and putt-putt golf gift cards, washing their hands had Mary Kay Satin Hands, snack time had Moe's and Bonefish gift cards, etc.) The teachers got put in time-out too!! It really was a great time!!

The salad that I've made for the past two years is wonderful and so easy to make, so I had to share it here!

Taco Salad

1 lb ground beef browned and drained
1 head lettuce shredded (or buy the kind that comes shredded like me)
2 tomatoes chopped
2 small cans black olives sliced (I just use 1 can, as I'm not a fan of olives)
1/2 red onion chopped
1 bag of Doritos crushed
1 jar Marie's Creamy Italian Garlic Dressing (found in the refrigerated salad section)
2 cups of shredded cheddar cheese

***Can be made ahead EXCEPT ADD DRESSING AND CHIPS JUST BEFORE SERVING***
The chips get soggy real quick!!
It's not real diet friendly, but it tastes delicious!!
